- About Noodle-Making -

Written by Donias

Noodles have been around for a long, long time. It is originated in Asia, but it has only been a few hundred years since the noodles made their way across the continent.

The main ingredients of noodles are wheat flour, buckwheat flour, potato starch, and others. They are first kneaded with water, and then prepared by either thinly slicing them, or thinly extracted by hand. If the noodles are prepared by hand and dried out in warm breeze, then plain noodles are made for most noodle dishes. For noodles used in Udon, the knead is first flattened, then either sliced or extracted by hand, with no drying in the process. If a noodle frame is used to extract the noodles, followed by a quick frying, then you'll have yourself a nice set of ramen noodles.

To create a high-quality set of noodles, it's imperative that you have a high-quality wheat flour. The wheat harvested around Tir Chonaill in the northern parts of Uladh is considered the highest quality of its kind, thanks to its cold, yet sunny weather.

To make some noodles, first prepare some wheat flour. Pour the flour into a big pot, pour some water in it, and start kneading. For added taste, add some salt or a little bit of oil. There are two different techniques to make noodles, depending on the dish. You can add ample amount of water to make a wheat paste, followed by throwing in more wheat flour to make the dough soft, or you can add more flour and less water to make the dough more tough. The soft dough is good for extracting noodles using a frame, and they are excellent for making thin noodles used for various noodle soups. The tough dough is great for creating chewy noodles with a lot of texture, which is perfect for Udon and other dishes involving thick noodles. To toughen up the noodles even more for added texture, some with make a dough by kneading in warm water, or batter the dough with a bat.

These noodles are usually dipped in hot soup for a noodle dish. Most of these soups are made by boiling some meat in the water for a prolonged time, then dipping in the noodles for a simple noodle soup. Based on different cooking methods, you can create Udon, ramen, and other types of delicious dishes, and you can also choose not to involve hot soup and just make a cold noodle dish out of it, too.

In cities, the noodles may be created en masse and sold in stores, but most other regions still prefer cooking up their own noodles.
