That doesn't necessarily yet prove that enemies got the Defense run, though I haven't actively been searching for it. However, I have fought Cessair and they didn't walk with Sword Counterattack, nor were they able to Sword Smash debuff.

No. Zombies don't have a melee weapon.

The Goblin Bandits as well as Homestead Bandits from the Treasure Chest event a while ago were able to run with Defense.
